I’m not one to make New Years resolutions but I definitely want to cook more in 2018. It’s already mid February! Where has the time gone? With that said, I’m actually succeeding and cooking everyday. It’s challenging but I am healthy and find it therapeutic at times. I’m struggling with anemia and am pre-diabetic. So I’m definitely trying to better myself physically and financially. Cooking helps with both. This week, I wanted to try my hand at Banana Bread and muffins. Both things sound super unhealthy, unless you substitute the so called “bad stuff” with healthy ingredients.
- 3 ripe bananas
- 2 eggs (substitute with flaxseed eggs)
- 3 tbs of maple syrup
- 2 cups of almond flour
- 1 tsp of baking powder
- 1 tsp of cinnamon
- 1 tsp of nutmeg
- 1 tsp of vanilla extract (I used a tbs)
Mash the bananas in a bowl and mix everything together. Preheat the oven at 350, let it bake for 45 minutes. Flip out of the pan when it’s done.
You may use the same recipe for the muffins but add:
- 1 tbs of maple syrup
- Vegan chocolate chips
Use cupcake sheets and voila!
